Abstract

In this article, the alternatives changing traditional diet and modifying food coınposition in order to solve nutritioıı deficiencies, were compared, food enrichment applications in the world were overviewed and finally the fortification of hread with thiamin, riboflavin, niacin and iron wcıs discussed from the technical and economical point of view.
