Abstract

It is unfortunate that some of the people in the field of milk production and marketing aim abnormal profits by changing the compositions of milk, since than the importance of milk in humaiı nutrition has been understood. Due to this fact the quality control on milk and its products is gaining more importance. Therefore, in this work, the protein concentrations on samples of various milks in market have been determined. It has tried to find .\vhether any changes in their protein values are done by changing their compositions, and their protein proportions in comparison with Standard values. In this work, the protein values of pastorised milks of Mis and Pınar in aseptic packages and A.O.Ç. milk in bottle have found to be in Standard values. On the other hand the.pastorised draught milk of A.O.Ç. has found to be of a lower protein value when compared with Standard protein values. Also, the protein determinations on the draught milks sold in ten different districts have been done. The seven out of the samp Ies have found to be of higher protein values, compared to the Standard, but the remaining three samples found to be of lovvcr protein values and brought some suspicion into mind. Therefore, it is expected to prevent the draught milk marke ting in districts, because of causing to spread diseases like brusellosis, and moreover of their spoiled compositions. On the other hand, necessary attempts should be done to support the pastorised milk market with a proper and extensive distribution in order to let people to get benefit of such a food rich in protein.
