Abstract

İn this study, utilization of carotene from carrots and spinach vvas compared vvith retinol from liver in humans, For this purpose 6 healthy and volunteer adult vvomen, 21 to 28 years old, served as subjects for 34 days. The study vvas made up 6 periods of vvhich 3 experimental and 3 basal. During the second, the fourth and the sixth periods vitamin A vvas provided from carrots, spinach as carotene and liver as retinol, respectiveiy. At the beginning of the study to adjust the body, basal diet vvhich contained minimum amount of vitamin A vvas given for 7 days and in betvveen the experimental periods to prevent the effect of previous experimental diet, basal diet vvas also given for 3 days. Basal diet provided enough daily energy, protein, fat, minerals and ali other vitamins, During the vvhole study sample of diets, blood.urine and faces vvere collected for nitrogen, fat, carotene and retional analeyses. Nitragen balance, both carotene and retinol absorption and excretion and serum levels of carotene and retinol vvere studied. Mean daily nitrogen balances of the subjects, fed basal diet plus carrots, plus spinach and plus liver vvere +0.29, —0.04 and —0.16 gx respectiveiy; carotene absorption rate vvere 58,9, 41.7 and 38.6 %, respectiveiy; retinol absorption rate vvere 55,5, 45.5 and 89.9 % , respectiveiy; serum carotene levels vvere 164, 138 and 132 [ig / 100 mİ, respectiveiy; and serum retinol levels vvere 48.6, 41.9 and 56.8 [ig / 100 mİ, respectiveiy. These results suggest that when majorty of protein (80 %) in the diet vvas provided from plant sources and at the moderate fat intake, yellovv and green vegetables serve as a good source of vitamin A. İn addition, this study shovv that carotene from carrots vvas converted to vitamin A or retinol more than the carotene from spinach. İt can be concluded that vvith nutrition education, Turkish people have to consume more of these vegetables.
