Glycemic Impact of Carbohydrates Containing Foods and Health

Abstract

Recently; qualities of carbohydrates are evaluated according to glycemic impact. For glycemic im pact of carbohydrates concept of glycemic index, glycemic load has been used. Now concept of glycemic glucose equivalents (GGE) is recommended to be used fo r this purpose. GGE reflect the change in postprandial blood glucose level. Amount of glucose in a food indicate the value of GGE of that food. In prevention and management of diabetes and related diseases that are important health problems, low carbohydrates impact foods are helpful.
